Inside Out Egg Roll



Ahhhh. Another not-so-fabulous picture of a pretty darn good meal. Why is it the healthful stuff just never photographs as well? I admit I didn't try that hard to make it pretty, but I thought its lack of fat and calories and its fantastic taste would be enough to make you want to try this inside-out eggroll casserole (with snow peas and a fried egg, obviously.)

I love Chinese food. OK. I love Chinese food that we Americans eat, which I'm sure is terribly Americanized. Being such a salt-eater I of course love soy sauce. (I'm the salty; Brad is the sweetie. Ha.) Unfortunately, "real" Chinese food is chock-full of fat and calories, and those are two things I can't have right now! So I'm eating more healthfully, and I'm always on the lookout for ethnic foods trimmed down, so to speak. And since I had heard such good things about this quote-unquote casserole I knew I had to try it. It really was good and curbed my Chinese craving, and even Brad cleaned his bowl! I always count that as a success....

Inside-Out Eggroll Casserole
Found on Weight Watcher's Message Board (This is a Core recipe.)

1 bag cole-slaw mix (cabbage, carrots, etc. - or you can chop your own)
1 T canola oil
Soy sauce, to taste
1/2 tsp. garlic powder
1/2 tsp. ginger powder
1/2 tsp. Chinese five-spice powder (or allspice - works just as well)
Salt and pepper to taste
Add-ins of your choice: Cooked tofu or other meat and your choice of canned, drained water chestnuts, snow peas, canned hearts of palm, canned bamboo shoots, etc.

1. Saute slaw mix in canola oil until it cooks down.
2. Add soy sauce and spices; saute a bit longer.
3. Throw in your choice of add-ins. (I added snow peas and chopped canadian bacon.)* Saute until you're happy with consistency; add more soy sauce and salt and pepper to taste. Serve warm!

* I sauteed the canadian bacon before I added it to the cabbage.
** I fried the egg separately, obviously, and I left the yolk runny. I put the egg in the bottom of the bowl and added slaw mix to top so it was easier to mix.
*** I see no reason you can't make real egg rolls with this mix. But calories, calories ...
